The brief was simple and the constraint was not: replace the failing waste runs under a commercial kitchen without the restaurant losing a single service. We worked six consecutive nights from close to 6am, leaving the floor clean and the kitchen signed off before the first delivery arrived.
Grease had reduced the main run to roughly a third of its bore. We replaced it, re-graded the fall, and fitted accessible rodding points so the next clean is a twenty-minute job rather than another night shift.
